I got this recipe from a freeze-it-and-forget-it cookbook. I've been on a lime kick lately, so it works well.
Beef Fajitas
1 1/2 lbs round steak
1/2 c. lime juice (fresh tastes better, but bottled works well too)
1/4 c. tequila
3-4 garlic cloves, finely minced
1 tsp. salt
1/2 tsp. ground pepper
1 small onion, sliced thinly into rings
1 T. vegetable oil
1 pepper (any color) sliced into strips
warmed flour tortillas
Mix lime juice, tequila, garlic, salt, and pepper together in shallow dish. Cut beef into 4 pieces and place into dish with marinade. Turn beef to coat. Cover dish and refridgerate for 3-4 hours, or overnight.
Grill beef or stir-fry in heavy skillet over medium-high heat. Carve beef into thin slices. Set aside. Stir-fry vegetables for 2-3 minutes, or until tender-crisp. Put beef back into pan with the vegetables and saute for another minute.
Serve beef and veggie mixture on warm tortillas.
I like to have mine with a little sour cream and guacamole on it, but to each their own.
If anyone else has any good recipes, please let me know! I'm in a kind of rut right now, making the same foods all the time, and it's getting boring.
